At a time when wheat flour was too expensive for the families of Pico, given that corn was a cereal abundantly available on the island, it was used to make cake to accompany meals or, as was often the case, being the only food and nourishment available.
Traditionally, corn cake was a quick way to make bread because it didn't need to rise. The same recipe could be transformed into a "brick cake, " which was baked in a clay or brick dish over a flame without having to be cooked in a wood oven.
